Shakshuka

Shakshuka is a delicious North African and Middle Eastern dish of poached eggs in a spiced tomato and pepper sauce. It’s perfect for breakfast, brunch, or even dinner, served with crusty bread.

      Sauté the vegetables: Heat olive oil in a large pan over medium heat. Add the chopped onion and cook until softened (about 5 minutes). Stir in the red bell pepper and cook for another 5 minutes.

      Add the spices: Stir in the garlic, cumin, paprika, and cayenne. Cook for about 1 minute until fragrant.

      Cook the sauce: Pour in the chopped tomatoes and tomato paste. Season with salt, pepper, and a bit of sugar if needed. Simmer for 10–15 minutes, stirring occasionally, until the sauce thickens.

      Poach the eggs: Make small wells in the sauce and crack an egg into each one. Cover the pan with a lid and cook for 5–7 minutes, or until the egg whites are set but the yolks are still runny.

      Garnish and serve: Sprinkle with chopped parsley or coriander and crumbled feta, if using. Serve hot with crusty bread or pita.
