In a blender or food processor, combine the sour cream (or yogurt), coriander, lime zest, lime juice, and garlic.

Blend until smooth and vibrant green. If it’s too thick, you can thin it slightly with a splash of water or a bit of olive oil.

Season with salt and pepper to taste. Add cumin or chili flakes if desired.
